Lawrence County and other area residents will be heading outdoors this holiday weekend to cook on grills for family gatherings, parties or other type gatherings. The Illinois Department of Public Health is offering tips to avoid foodborne illness from cookouts. A good rule of thumb is to keep hot foods hot and cold foods cold. Outdoor coolers containing foods that can spoil should be kept at proper temperatures and raw and cooked meats should not come into contact to prevent cross-contamination. Leftovers should be put in the refridgerator after two hours of sitting out and one hour if the temperature outdoors is above 90.
